好吃的越南“火車頭河粉”怎樣做呢

    火車頭河粉是越南河粉的代表,越南河粉的精妙之處在于慢火細熬出來的高湯,提前熬制好湯底,想吃的時候下一碗河粉,非常方便!
火車頭河粉的做法 
1.準備好食材,提前熬制牛骨牛肉湯,不要添加菌菇類食材,熬制牛骨時加入少許香茅即可。
2.取出適量牛骨湯加熱
3.待湯煮開后,放入打好十字花刀的牛肉丸煮熟
4.豆芽和油菜洗凈后焯水,撈出過冷水,濾干備用
5.鍋中入冷水煮開,關火后放入河粉
6.燜制2分鐘,待河粉變軟無硬心后撈出放入碗中。(根據水溫調節時間,不要泡糟)
7.將生牛肉片在鍋中汆水,熟后撈出。(也可直接在碗中用熱湯燙熟)
8.將熬湯時煮好的牛肉切片、牛丸、湯好的肥牛和蔬菜放入碗中
9.放入糖、鹽、雞精和少許魚露,澆入熱湯
10.食用前撒少許紅尖椒、一片檸檬即可,有九層塔的話要放一些,味道更好
